Chef Joaquin Morales’ journey to El Águila Restaurant began in the rich, volcanic soils of Michoacán—Mexico’s famed Avocado Belt—where food is not merely sustenance, but a reflection of identity.

Raised in a region that produces avocados year-round, Chef Joaquin learned early that ingredients carry stories: of land, climate, and the hands that tend them. Upon moving to the United States as a young teenager, he began a chapter that exposed him to diverse kitchens while keeping him closely connected to his roots. Those formative years became an education in movement, shaping a culinary style that blends ancestral technique with a curiosity for new flavors.

A 1995 visit to the Mississippi Gulf Coast sparked more than admiration—it planted the idea of a future. Drawn to the region’s warmth and coastal abundance, Chef Joaquin eventually made Gulfport his home in 2013, opening El Águila on May 5, 2013. The name was chosen with intention: in Mexican tradition, the eagle symbolizes strength, vision, and the freedom to rise—an emblem that mirrors the chef’s own path of resilience, ambition, and deep respect for heritage.

What distinguishes El Águila is Chef Joaquin’s refusal to be confined by expectation. While the soul of Michoacán remains at the heart of the menu, the restaurant has evolved into a culinary crossroads where refined Mexican techniques meet Gulf Coast freshness. Signature dishes—Agave Shrimp, pan-seared salmon, and elevated interpretations of Mexican classics—share the spotlight with unexpected favorites like house-made pasta, lamb chops, pizza, ribeye steak, and catfish.
